Baked Eggs with Red Sauce
One day I was pursuing through Pinterest and came across a dish that looked amazing. It was in a cast iron skillet with a red sauce and baked eggs. I didn't even click on the recipe to read about it, but the image stuck in my mind. (It was called shakshuka for those interested.) That being said, the image stuck with me for a couple of days. Last night as I lay in bed trying to fall asleep, I thought about it and starting thinking, perhaps I could make something using it as an inspiration point with the ingredients already in my house. So this is what I made, I think it was really good. Feel free to change/omit or completely do your own thing! I'm sure I broke a few culinary laws in making this.
Baked Eggs in a Red Sauce
1 package of breakfast sausage
1 orange (or whatever color bell pepper or spicy peppers if your prefer)
half a bunch of kale
1 can of pureed tomatoes
1/2 cup heavy cream
1/3 stick of butter
lots of parmesan
mozzarella if you like
1/2 tsp of garam masala spice
1/4 tsp of ground cardamom
4 eggs
In a large skillet brown your sausage. When it is mostly cooked add diced bell pepper and kale. Cook until vegetables are tender.
In a small sauce pot mix tomatoes, cream, butter and spices. Bring to a boil and let cook until it thickens a bit, by reducing. Add parmesan cheese and salt and pepper. (Don't salt before reducing or it will be too salty!)
Pour red sauce over sausage and mix. I threw in some chunks of mozzarella too. Then either butter some ramekins or if you are using an over proof skillet use that. If you are using ramekins, fill half way with tomato sausage mixture an carefully crack an egg on top. Or carefully crack eggs around the skillet. Bake at 350 for twenty minutes or until egg whites are cooked through and egg yolks are still runny. (It may take less time, because I prepped the sauce up ahead of time so it was cold when I put it in the oven.)

Taco Pie
A few days ago I saw something labeled as Taco Pie on Pinterest. The thought of it struck with me and I decided to make my own version. I think the Pinned version had a potato flake crust, which just seemed a bit odd to me. So I changed up the crust and made a few other adjustments, such as taking out the packaged taco seasoning and came up with this version which I think is pretty awesome. I basically took the idea of a 7 layer dip and made it into a meal instead of an appetizer. My husband took one bite and said, "Oh my god, this is SO good." Of course my 4.5 year old twins looked at it and said, "Ew... it looks disgusting." Once I got them to taste it though, they were pleasantly surprised and told me it tasted better than it looked. I guess beauty is in the eye of the beholder.

Cornmeal Crust
3/4 cup of cornmeal
1/4 cup flour
1 tsp salt
2/3 cup of cold butter
4-5 tbsp of ice cold water
I used to make pie crusts in a food processor before my food processor bit the dust a few months ago. I'll describe both methods.
Food Processor: Put flours and salt in a food processor and pulse to mix. Add cut up butter and pulse until it resembled wet sand. Add ice water one tablespoon at at a time until dough pulls from the side and makes a ball. Do not over process. Wrap in plastic wrap and put in your fridge to rest for about 15-20 minutes.
By hand: Mix flours and salt in a large bowl. Add cubed butter. With two knives start "cutting" the butter into the flour. You do this by holding a knife in each hand and cut across the flour and butter, this is cutting the butter and incorporating it into the flour. Again you are left with sand like texture. Add your ice water and with your hands gently massage the dough until it forms a ball. Wrap with plastic wrap and put in your fridge to rest for about 15-20 minutes.
Taco Meat:
1/2 onion
1 bell pepper
1 lb ground beef
3-4 cloves garlic
1 tsp ground oregano
1 tsp cumin
2 tsp chili powder
salt & pepper
3-4 tbsp of tomato paste
3 tbsp cornmeal
Cut onion into small pieces and saute in a bit of butter with bell pepper. Add garlic and seasonings. Add ground beef. Stir the beef as it is cooking so it crumbles into small pieces. When the beef is cooked through, add tomato paste and then the cornmeal. Taste and adjust seasoning as needed.
Cheese Sauce:
2 tbsp butter
2 tbsp flour
2 tsp tomato paste
1/2 tsp cumin
garlic (powder or clove)
3/4 cup milk
1 cup grated cheese
Melt 2 tbsp butter in a small sauce pan. Add 2 tbsp flour and whisk together. Add 3/4 cup of milk and whisk until there are no lumps. Add tsp of tomato paste, 1/2 tsp cumin, salt and pepper and either some garlic powder or a grated clove of garlic. Last add cheese (I used monterrey jack, but cheddar or your favorite would work.) Stir until melted. Set aside.
Taco Pie Assembly!
1 Cornmeal Crust
1 recipe cheese sauce
Refried Beans
cheese
salsa
Sour Cream
chopped lettuce
olives
Roll out pie crust by liberally sprinkling counter with flour. Place in pie plate and form the pie shell. Scoop taco meat in the pie crust. Top with cheese. Add left over refried beans, or some from a can. (Check your ingredients if you used can and do not buy refried beans with hydrogenated oils.) Top with some cheese and bake at 375 for 30 minutes or until crust gets crispy.
Remove from oven and allow to cool for 10-15 minutes. (This helps with the cutting.) Top with salsa, sour cream, chopped lettuce and olives. Other toppings that would be good are avocados or tomatoes. I hop you enjoy!

Enchilada Casserole
This dish was inspired by a pin off of pinterest. The original recipe was called something like Texas Ranch Casserole. But as soon as we ate my dish the family exclaimed, it tastes like enchiladas! Like I said, I took the original recipe as an inspiration point and made several changes. The biggest was to replace the canned soup with real cream. I kept this very mild since my kids don't like spicy food, but feel free to throw in some jalapenos or other favorite peppers to add some heat!

Enchilada Casserole
12 corn tortillas
2 cups shredded chicken
2 cups heavy cream
1 pablano chili
1 red bell pepper
3 stalks of celery
1 onion
3 cloves garlic
3 tbsp chili powder
1 tbsp celery seed
1 can roasted tomatoes, diced
1.5 - 2 cups shredded cheese
1/4 cup cornmeal
butter for sauteing in and for greasing casserole dish with
Dice onion and start it sauteing in a pat of butter. Chop celery and add it to the onion. Next dice up the bell pepper, pablano chili and garlic. Add all of that to the onion and celery. Saute until vegetables soften. Add celery seed and chili powder, salt and pepper. Stir well. Next sprinkle in the cornmeal and toss all the vegetables in it. Quickly add the heavy cream and stir. Bring to a boil. Add the can of tomatoes, undrained. Let it simmer, stirring frequently until everything thickens up. Add 1/2 to a 1/3 grated cheese. Once thickened, turn off heat and add in cooked shredded chicken.
Grease a casserole dish with butter. Cut tortillas into strips. Line one layer of dish with tortillas and some of the grated cheese. Spoon in some of the chicken-vegetable mixture. Add another layer of tortillas and repeat until you get to the top of the dish. Top with extra cheese. Bake at 350 for 40-45 minutes.
By the way, my husband came in and tasted the dish right before I added the chicken. He thought I was making a nacho cheese dip. He grabbed a tortilla chip and dipped it in and said, that it was a GREAT dip and for me to write down what I did so I could replicate it for him. So I'm obliging his request. :)

Chicken Bacon Ranch Mac N' Cheese

3/4 pound of pasta
1 large chicken breast
3 pieces of bacon
8-10 button mushrooms
1 tbsp flour
1. 5 cups milk
1/2 cup heavy cream
1/8-1/4 onion
2 cups grated cheese
1/2 cup grated cheese for top
1 tsp dried dill
1 tsp garlic powder
Cook your noodles to package directions.
Butterfly open your chicken to make it thin so it'll cook quickly. Get a grill pan hot and grill chicken that has been salted and peppered. Set aside.
Cut bacon into 1/2 inch pieces and put them in a medium size pot. Cook on medium heat stirring frequently. When bacon is about half cooked add chopped mushrooms. When bacon starts to get crispy, remove it and the mushrooms from the skillet and set aside.
Sprinkle flour over the bacon grease adding butter if you don't have enough grease to cook bacon. Whisk to remove all the lumps. Add milk and heavy cream. Add dill and garlic powder, salt and pepper. Keep on medium to medium high heat and whisk until the sauce starts to thicken. Add grated cheese and stir to blend the cheese in.
In a casserole dish put the cut up chicken and mushrooms. Drain pasta and add it to the casserole dish. Pour in cheese mixture and stir to get all the noodles cheesey. Sprinkle with bacon and extra cheese. Put under the broiler for 8-10 minutes until cheese gets bubbly and brown on top.

Grain Free Casserole
I got the recipe for this casserole from Family Living Simple, but it was Paleo. I added cream, cheese, more tomato paste and an extra egg.

Grain Free Casserole
2 zucchini
2 carrots
1 sweet potato
1 can of tomato paste
2 lbs of ground beef
10 button mushrooms
3 cloves garlic
1 onion
4 eggs
1/4 cup heavy cream
lots of mozzarella and parmesan
oregano, basil, salt and pepper
Cut your zucchini and carrots into thin noodles using a mandolin. If you don't have one, slice into thin slices and then cut each slice into small strips. Use a cheese grater or food processor to grate the sweet potato. Put the zucchini and carrot strips and grated sweet potato in a very large bowl. Toss to mix. Start cooking your beef and add chopped mushrooms, onion and garlic to it as it cooks. Add tomato paste, herbs and seasonings and mix well. Allow meat mixture to cool down.
Grate cheese into the vegetable mixture and toss. When meat mixture cools, add it to the vegetables and mix well. Beat four eggs and heavy cream together and pour into meat mixture. Using your hands, make sure everything is well incorporated and transfer to two oiled baking dishes. Preheat oven to 400 degrees and bake for 20 minutes covered and 20 minutes uncovered.

Sausage and Cabbage Stew

1/2 head of cabbage
4-6 links of sausage or bratwurst
2 carrots
1 stick of butter
2-3 cups of homemade chicken stock
sprinkle of fennel
salt and pepper
Chop cabbage very fine and add to a oven proof casserole dish. (I used the stoneware baker from Pampered Chef.) Grate the carrots and add to the cabbage. Cut sausage into rounds and then brown it in a hot skillet. (You can skip the browning stage if you are in a hurry.) Add it to the cabbage. Cut the stick of butter up and place it around the casserole dish. Sprinkle with salt, pepper and fennel. Add the chicken stock and cover. Bake for about 45 minutes covered at 375, and then 15 more uncovered. Enjoy!

Low-Carb Lasagna Muffins- Work in Progress

3 zucchini
ball of fresh mozzerella (I used half the ball)
6 tbsp cottage cheese or ricotta cheese (I prefer cottage cheese in my lasagna, but ricotta is more traditional)
melted butter to grease muffin tins with
Meat Sauce:
1 tbsp olive oil
1/2 lb ground hamburger or ground turkey
6 cremini mushrooms, chopped fine
2 cloves garlic, minced
1 tbsp Italian seasoning
1 small can of diced tomatoes
Bechamel Sauce
1.5 tbsp butter
1 tbsp arrowroot
1 cup heavy cream
pinch of nutmeg
salt & pepper
Start browning your meat in a small skillet with the olive oil. Add seasonings, garlic, mushrooms. Continue cooking until mushrooms are cooked. Add diced tomatoes and simmer on low while you prepare the bechamel sauce.
In a separate small pot, melt butter and add arrowroot. (I no longer use cornstarch*, since it is a processed food.) Whisk the arrowroot into the butter until incorporated. Whisk in the heavy cream, nutmeg and salt and pepper. Boil until thick, remove from heat.
Slice the zucchini as thin as you can with your mandolin. Crisscross three slices in the bottom of each muffin tin. The zucchini will go up the sides and over a bit. Put 1 tbsp cottage cheese, 1 tbsp meat sauce and 1 tbsp of bechamel sauce. Then cut the next layer of zucchini into 1 inch squares. Layer the cut zucchini over the bechamel. Top with thinly cut mozzerella. Bake at 375 for 30 minutes or until mozzerella is bubbly and brown. (I recommend putting a cookie sheet under the muffin tin so you don't boil over and make smoke in your house. I'm just talking from experience here!) Let cool a bit before trying to remove.
Mine got saggy in the middle, so if anyone has any advice for making them more firm, I'm all ears!
*The majority of the corn starch on the market is GMO (genetically modified organism) and cornstarch is a highly processed food ... here's an excerpt from an article on the Weston A. Vegetable Cheese Casserole with Chicken (Grain Free)

1 head of cauliflower (or one bag frozen)
2-3 carrots, chopped in circles
1 head of broccoli (or one bag of frozen)
1/2 onion
1 tbsp oil/bacon grease
1.5 cups shredded or diced chicken - I used leftover from my homemade stock
cheese- LOTS of cheese About 3 cups of your favorite types
6-8 oz of cream cheese OR strained yogurt to make it thick
1 tbsp grainy mustard
2 tsp of oregano
2 tsp basil
3/4 cup of heavy cream or raw milk
1 heaping tbsp of arrowroot (I prefer not to use cornstarch, since it is highly processed)
salt & pepper to taste
Dice onion and saute it until it is very caramelized in oil or bacon grease. Cut up one head of cauliflower and one head of broccoli, boil both is a pot of water with the chopped carrots. If you are using any frozen vegetables, add them after the fresh ones start. You want all the vegetables to be about the same amount of "fork tender" in the end.
While the vegetables are cooking, start grating your cheese. I always use block cheese, because chemical additives are added to pre-shredded cheese to make it last longer. (One thing I'm learning about labels, is if it is an industry standard it does NOT have to be put on the label!) Plus, I love using Raw Milk Cheddar and Raw Milk Monterary Jack. You can only get cheese that is aged past 60 days raw in America. So you won't find Raw milk mozzarella or any other softer cheeses. At the most you can look for Whole Milk Mozzarella. (Learning how to make it on my own is one of my future projects!) Anyway, for this recipe I used: Cotija, marble jack, Parmesan & cheddar. Then I grated some mozzarella and more Parmesan for the top. All in all I used about 3 cups (including the cream cheese) for the filling with just a bit on top.
In a bowl, mix your cheeses, cream cheese, cooled onion, spices and mustard in a very large bowl. When vegetables are fork tender, drain them very well and return them to the hot pot. Keeping it on the flame, gently stir them a bit to dry them out some more. Add the vegetables to the cheese mixture. Add 1.5-2 cups of shredded or diced chicken and stir some more. Pour into a casserole dish and pack it down. In a small bowl, mix heavy cream and arrowroot. Pour heavy cream over vegetable cheese mixture and encourage it to seep down into the dish. Top with a bit more cheese and bake at 375 for 45-50 minutes.

Chicken (not) Divan

6 poached chicken breasts, chopped*
1 recipe of mushroom sauce**
1 cup homemade mayonnaise
14 oz grated cheddar cheese
4 heads of steamed broccoli
1 cup chopped nuts for topping
In a very large bowl, mix the chicken, mushroom sauce, mayo, most of the cheese and the steamed broccoli. Pour it into two casserole dishes. Top with the rest of the cheese and nuts. Bake at 350 until bubbly and cheese is melted.
*You can use any kind of cooked chicken, baked, sauted, etc. I poach my chicken by placing breasts in a pot, cover with water. Add salt, bay leaf, all spice and thyme. Bring to a simmer, cover and cook for about 20 minutes. Do NOT boil or the chicken will be tough. The water can then be used as a chicken broth (stock uses bones, but this is a nice delicate broth.)
**Mushroom Sauce:
a lot of mushrooms- 5 cups or so
1/2 large onion finely diced

From Scratch - Traditional Green Bean Casserole

Green Beans:
A bunch of green beans- about 7 cups
left over bacon grease
garlic clove
1 bay leaf
sea salt
pepper
Mushroom Sauce:
a lot of mushrooms- 5 cups or so
1/2 large onion finely diced
1 container of heavy cream preferably not pasteurized, but I haven't been able to get any of that yet.
1/4 cup flour - I used whole wheat
3 tbsp butter
Crunchy Onion Topping:
2 onions - I used a sweet yellow onion
1/2 cup arrowroot powder
Cajun seasoning
3 tbsp butter + more if needed
Cut the tips off your greenbeans and then cut them in halves or thirds. Put them in a large skillet and cover with water. Add plenty of sea salt, pepper, bay leaf, smashed garlic clove and bacon grease. Bring to a boil, reduce, cover and let simmer for 45 minutes taste and re-season as necessary. WHAT! Yes, you heard me. I'm not making a "Fresh" greenbean dish here... I'm mimicking greenbeans from a can and greenbeans from a can are much softer than beans that have been blanched for 5 minutes. No, they aren't vivid and pretty green but they are GOOD! Plus, this is how my Mema makes greenbeans and she's been doing it that way for years. Drain the greenbeans and set them aside.
To make the mushroom sauce, chop onion very small and place it in a large skillet with melted butter. Chop mushrooms as small as you like. Since I was again, mimicking the canned sauce, I chopped them fine since the canned stuff almost doesn't even hint at mushroom.... strange, right? Add the mushrooms to the softened, translucent onions and cook until they have cooked down quite a bit. Add more butter if the skillet is dry. Sprinkle flour across mushrooms and stir until there is no dry flour left. Pour in cream and bring to a boil to thicken.
Butter a baking dish, I used an oval one so I'm not sure what size. Pour the cooked green beans in it and top with the sauce. Stir them together. You could also mix them in the skillet and then pour in the baking dish, whatever is easiest. Set aside. Be sure to scrape the skillet and lick the spoon.... oh yeah, it's that good.
To make the topping, pre-heat oven to 475. Slice 2 onions (they cook down A LOT) into thin slices and place in a ziplock bag. Add arrowroot and seasoning. Toss until coated very well. Add melted butter and mix again. On a large cookie sheet that has been greased, lay out onions in a very thin layer. Use two sheets if needed. (I should have used two!) Place in the hot oven and stir every 8 or so minutes for about 30 minutes until they start to crisp up and turn brown. Top casserole and serve. If you are doing it the night before, do not top the onions or they will get soggy. If you can save the onions to the next day, do that. If not, store them in a bag with a paper towel and recrisp them in the oven for a little bit before topping the casserole. Enjoy!!!

Chicken Enchilada Chili
For instance, the makers of Crisco were just trying to find a way to get rid of their industrial sludge leftover from making candles. Some one along the way thought it looked like lard (not too unlike the time my very own Mema thought she could substitute a bay leaf for basil in a pasta dish since they were both leaves and started with ba... they might have looked similar but they were definitely NOT similar!) This person took this lard look alike and baked a pie with it. Surprisingly it worked out okay and tasted okay. Viola! A new (cheaper) oil was introduced to the market. What they didn't know then was that it is very damaging to humans in a very slow and unapparent way. For more of the whole story on Crisco, please see: The Rise and Fall of Crisco. Well back to my recipe... I love mexican food! I often have made burritos and quesidallas and other tex-mex delights. But since I'm going low carb, I needed to find a way to have my favorite flavors without the tortilla. Then the other day when I was picking up my Kombucha scoby from Nicole she had a dish similar to this bubbling away on her stove. I told her I wanted the recipe but since she left for vacation the very next day she hasn't had time to post. So I made something up myself.

2 tbsp ghee or butter
1/2 onion
3 cloves of garlic
2 cans of organic fire roasted tomatoes
1-2 pablano or other favorite chili
1/2 tsp ground cumin
1 tsp dried oregano
pinch (or more) of red chili flakes
sea salt
2 chicken breasts, previously cooked*
cheese sauce:
2 tbsp butter
2 tbsp whole wheat flour
1.5-2 cups whole milk (I use raw milk)
1.5-2 cups lightly packed shredded cheddar cheese
sea salt
pepper
Make cheese sauce first, in a medium size pot, melt butter. When butter is melted, add whole wheat flour and whisk until all of the flour is wet. Continue to whisk to cook the flour a bit. Add milk a little bit at a time. Start with just a splash and whisk lumps away. Add a little bit more and keep whisking keeping lumps away. Add sea salt and pepper to taste. Add cheese and continue to whisk until sauce has thickened and cheese melts. Set aside, keeping warm.
In a large skillet melt ghee or more butter. Dice an onion into small pieces and add to butter. Chop garlic and add it to the onions. Chop chili peppers and add them. I like to add my spices at this time to toast them and make them more flavorful before adding liquids. So add the cumin, oregano, red chili flakes, sea salt and pepper. At this point the onions should start to be soft and brown bits may be accumulating on the bottom of the skillet. Open tomatoes and add them. When the tomatoes start to come to a boil, take a ladle and ladle some of the tomato-onion mixture into the cheese sauce to temper it. Stir it into the cheese and add a few more ladles of tomatoes. Then pour all of the cheese sauce into the tomato sauce. Add diced chicken and cook until warmed through. Serve with fresh guacamole and organic sour cream.
*If you don't have any chicken cooked, you can add raw chicken in after the onions, just be careful not to overcook when you bring the tomatoes to a boil.

Houston's Spinach Artichoke Dip

1 stick of butter
1/2 chopped onion
2 boxes of frozen spinach (cooked and drained very well)
1 can of artichoke hearts, chopped
8 oz. cream cheese
8 oz sour cream
3/4 cup parmesan cheese
8 oz Monterrey Jack cheese, shredded
Saute the onion and butter in a large skillet on low until translucent. Add next four ingredients until mixed well. mix in the parmesan cheese and the monterey jack cheese next. Stir well until everything is nice and melty. Serve with tortilla chips.

Chili, Cornbread & Roasted Okra

1 small onion finely diced
2 tsp olive oil
1 lb hamburger meat
2 cups of brown beans, previously cooked and thawed or canned
1 can of tomato sauce, or about 1.5-2 cups home prepared tomato sauce
2 tsp oregano
3 tbsp of chili powder
1-2 chilies (jalapenos, for example)
3-4 cloves garlic
Dice onion and saute them in olive oil in a large pot. Add minced garlic and diced chilies. Add ground beef, and break it up with the edge of a spoon. Before the beef is cooked all the way add seasonings of oregano, salt, and chili powder. Add beans and tomato sauce. Stir and adjust seasonings as needed. Let simmer for 10-15 minutes. Serve with cornbread.
I've made cornbread before on this blog, and yet, I'm always looking for a better recipe. Last nights cornbread came out great! Too bad I didn't measure... here are the approximates..
2 cups of cornmeal
1/2 cup white-wheat flour
1/2 cup whole wheat flour
1 tbsp baking powder
3-4 tbsp honey
2 eggs
1.5 cups milk
1.5 tsp salt
2 tbsp butter
1 tbsp coconut oil
Preheat oven to 400. In a large mixing bowl, mix the cornmeal, white-wheat flour and whole wheat flour. Add the baking powder and salt and whisk to incorporate. In a small bowl, beat eggs, milk and honey. Add to dry ingredients and mix well. Place a cast iron skillet on the stove and pre-heat it, medium-high heat. Add the butter and coconut oil. When it is melted swirl it around to grease the sides of the skillet and the pour it into the batter. Turn off the stove. Mix the melted butter/coconut oil into the batter and immediately pour it back into the hot skillet. Put the skillet in the middle rack and bake at 400 for about 20minutes or until golden brown on top.

Tex-Mex Stuffed Bell Peppers and Fruit Salad

1 recipe of the taco meat & veggie mixture from my Taco Mini Muffins.
2/3 cup wheat couscous
3/4 cup of chicken or beef stock (or water.)
4 small bell peppers
2 oz of your favorite Mexican cheese, grated
In a small pot, bring stock to a boil. Add couscous and stir. Turn off heat, cover and let sit for 5 minutes. Add couscous to taco meat mixture and stir. Cut the tops off your bell peppers. If the bottoms are very crooked, you may want to cut of a very small amount to make them level so they will stand up. Stuff each bell pepper with 1/4 of the taco/couscous mixture. Place them on a cookie sheet and bake at 425 for 30 minutes. Top each bell pepper with some of the grated cheese and broil until cheese is melted. Serves 4.

8-10 strawberries
1 cup of grapes (I did green and red
1/4 cup plain yogurt
1 tsp vanilla
1 tbsp honey
1/2 tsp cinnamon
1/2 tsp fresh grated giner
Peel and chop banana. Peel and segment one orange and cut each slice in half. Cut strawberries into fourths. Cut grapes in half. Place all fruit into a mixing bowl. In another small bowl, mix the yogurt, vanilla, honey, cinnamon and ginger. Pour over fruit. Serve chilled.

Red Pepper Mac N Cheese
I love Mac N Cheese! One of my favorite things about it is that it is very versatile. You can add veggies, or meat. Growing up my mom used to add stewed tomatoes or chunks of ham. Yum! The other day I wanted a fancier Mac N cheese without the chunks of veggies. I decided to blend the additions right into the roux, and it was a success.

Mac N Cheese (Mom’s Recipe)
White sauce
6 tablespoons of butter
6 tablespoons of flour
1.5 C milk
8 oz sharp cheddar cheese
1 lb pasta (any) al dente (firm)
Bread Crumbs
Additions
4 Red Peppers chopped
1 onion chopped
2 cloves of garlic minced
Melt the butter on low heat, add in the flour. Stir until bubbles appear - cook for 2-3 mines. Add 1.5 C milk slowly - stirring constantly. Blend the Peppers, onions and garlic until smooth and add to the roux. Add approx 8 oz sharp cheddar cheese. Add salt and pepper to taste. Cook 1 lb pasta (any) al dente (firm)
Mix together and bake covered till hot about 15 minutes
Take off cover, add (buttered) bread crumbs & grated cheese mixture - bake a few more ins or broil for a minute...watching constantly. It burns quickly.

Meatballs
I was going for a meatball with pene pasta and melted mozzerlla cheese bake. But I didn't have any pene and I didn't have any mozzerlla. But I did end up with some very delicious meatballs despite the fact that they were turkey. I used rigatoni, Parmesan and some jarred marinara, but the meatballs, they were the star of the show!

Italian Meatballs
1.5 lbs of ground turkey
1/3 of an onion
2 cloves of garlic
4 slices of bread
1 egg
2 tbsp italian seasoning
salt & pepper
If your ground turkey is frozen, defrost over night in the refridgerator. Or go very very slowly in the microwave. You do not want the edges to start to cook in the microwave or your meatballs will not turn out right. Place ground turkey in a large bowl. Grate 1/4 of an onion over the meat. Grate the garlic also. I use a microplane. Using a food processor pulse the bread into breadcrumbs. You can substitute Panko Breadcrumbs if you wish to buy premade ones. Add breadcrumbs to the bowl. Add egg and seasonings. Mix gently with your hands just until all the ingredients are incorporated.
Use a 1 tbsp cookie scoop to scoop out balls onto a greased cookie sheet. Spray meat balls with cooking spray. Set broiler to HIGH. Place cookie sheet under broiler about 4 inches away. Cook meatballs for about 7 minutes or until brown. Flip them all over and broil the other side. If you just want the meatballs and not in the pasta dish, but them in the middle of the oven farther away from the broiler and cook for longer until cooked through.
Put the meatballs in a baking dish with cooked pasta, cheese and marinara. Return to the oven and cook through for 25 minutes or until meatballs are cooked all the way and cheese is melted. I made enough meatballs and pasta to make two casseroles. I froze the second casserole, so it just needs to be reheated through.

Spaghetti Pie
I'm not sure where I learned this dish, but it is really easy to make and I hope it can become a family favorite. This is a method, the ingredients are up to your imagination! I made enough for two pie dishes because the leftovers are so great!

Spaghetti Pie
1 pound of spaghetti noodles
2 cups of mozzarella cheese
1 cup parmesan
10 eggs
1 cup milk
3/4 cup diced ham (or whatever veggies/meat you'd like)
marinara sauce served on the side to dip
Pre-heat oven to 350ยบ. Cook noodles according to package directions. Drain well and place half of the noodles in a greased pie plate, the other half of the noodles in the second pie plate.
In a large bowl, beat eggs, milk, cheese (reserve 1 cup of mozzarella to top the dish with), salt & pepper and any ham or veggies you'd like (mushrooms, bell pepper, onion etc.)
Pour egg mixture evenly in both pie plates. Take a spoon and wiggle noodles around to evenly distribute egg mixture. Top with remaining mozzarella.
Bake for about 30 minutes or until cheese is bubbly and eggs are set all the way through. Cut into pie pieces. Serve with marinara sauce on the side. Serves 12.
