Turkey Avocado Salad Sandwich

I just made this for the twins today. It was inspired by leftover turkey from Easter dinner. They loved it. Sorry no picture, they ate it too fast.

Turkey Avocado Salad Sandwich

2 pieces of whole wheat bread
1/2 a ripe avocado
2 oz turkey meat (deli style will work too)
1 tbsp mayo

Mince turkey meat. Scoop out 1/2 of an avocado into a bowl and smash with a fork. Add mayo and mix together. Add turkey meat. Spread on bread. Cut into bite size pieces and serve to nearest toddler.

  2. Thanks Amanda!! This was a pretty big hit. I added a little garlic and pepper and served it open faced... one slice to each munchkin. They gobbled most of it up and then licked the rest off the bread. 15 minutes later, they ate the leftovers from the bowl... I try to include avocado in most meals, but usually just cube it. So, this is a fun new way!!

  3. Oh, I'm so glad it was a hit. I need to make it again, I haven't made it in awhile. I've been doing a bunch of tuna fish sandwiches lately, I should shake things up a bit!
